Red fruit cheesecake

Our red fruit cheesecake is built on a mascarpone cream, worked to stay smooth without ever feeling heavy. The sharpness of the red fruits balances the sweetness of the cheese: that contrast is the whole point of the dessert, and what makes it an easy one to serve at the end of a meal.

It is made by hand, like the rest of our range. Keep it chilled until you serve it and cut it while it is properly cold: the slices hold their shape far better on the plate.
