What is a Pastel de Nata?
The Pastel de Nata is the most famous Portuguese pastry in the world. Born at the Jerónimos Monastery in Belém, Lisbon, it is a small puff-pastry tart filled with a lightly caramelised egg custard. At Wooly, our Portuguese pastry chefs make it to the authentic recipe, and it is baked several times a day in our shops.
What is the difference between a Pastel de Nata and a Pastel de Tentúgal?
The Pastel de Nata comes from Belém (Lisbon): a round puff-pastry tart with a golden custard. The Pastel de Tentúgal comes from the Coimbra region: a very thin dough, stretched by hand in the traditional way, rolled around an egg-yolk cream. Both are sold at Wooly Pâtisserie.
What does “pastel de nata” mean?
Literally “little cream pastry”: in Portuguese, “nata” means cream. It is a puff pastry tart filled with egg custard. “Pastéis de nata” is simply the plural.
How do you pronounce “pastel de nata”?
Roughly “pash-TELL de NAH-ta”: in European Portuguese, the s before the t sounds like “sh”. The plural, pastéis de nata, sounds roughly like “pash-TAYSH de NAH-ta”.
Pastel de nata or pastel de Belém: what is the difference?
It is the same pastry. “Pastéis de Belém” is the protected name of the confeitaria in Belém, Lisbon, which has been baking them since 1837; everywhere else they are called pastel de nata.
How long does a pastel de nata keep?
A pastel de nata is best eaten the same day: the puff pastry softens as it absorbs moisture from the custard. Keep it at room temperature rather than in the fridge. Eat it warm or at room temperature: there is no need to reheat it, and never in the microwave, which makes the base soggy.
