Price: €5.90

Two classics of Portuguese street food, sold by the piece. The bifana is pulled pork marinated in garlic, white wine and paprika, simmered until meltingly tender. Chorizo bread is bread dough rolled around smoked chouriço, then baked until golden. One is rich and fragrant, the other frank and smoky. Pick one, the other, or both.

The bifana is Portugal’s sandwich, eaten standing at the counter and at every village festival. At Wooly it is made with pulled pork: the meat is marinated in white wine, garlic, sweet paprika and bay, then simmered in its own juices until it falls apart. It is said to have been born in Vendas Novas, in the Alentejo; the town registered it as a trademark in 2011. In the north it is spicier, in the south more garlicky and milder: the same recipe, never quite the same taste.

Chorizo bread, pão com chouriço, comes from the other end of Portugal. Bread dough is rolled out, covered with thin slices of smoked chouriço, rolled up and baked. As it bakes, the fat perfumes the crumb and the crust takes on that copper colour you recognise from across the room. It is the petisco par excellence: shared over drinks, taken on a walk, served warm with a glass of red.

At Wooly both are ordered from the same page: choose the bifana, the chorizo bread, or mix the two in one basket. €5.90 each, and €4.90 from 10 pieces, both variants counted together. Enough for drinks, a meeting or a birthday without spending your morning on it.
