The bifana is Portugal’s sandwich, eaten standing at the counter and at every village festival. Thin pork loin escalopes are marinated in white wine, garlic, sweet paprika and bay, then simmered in their own juices until tender. It is said to have been born in Vendas Novas, in the Alentejo; the town registered it as a trademark in 2011. In the north it is spicier, in the south more garlicky and milder: the same recipe, never quite the same taste.

Chorizo bread, pão com chouriço, comes from the other end of Portugal. Bread dough is rolled out, covered with thin slices of smoked chouriço, rolled up and baked. As it bakes, the fat perfumes the crumb and the crust takes on that copper colour you recognise from across the room. It is the petisco par excellence: shared over drinks, taken on a walk, served warm with a glass of red.
