At Wooly, we follow this tradition to the letter: house-made puff pastry worked with butter, custard cream from fresh egg yolks and whole milk, baked at high temperature to achieve that slightly charred surface that is the hallmark of a true pastel de nata. Each batch comes out of the oven in the morning and stays warm until early afternoon.
We offer our pastel de nata in eight versions: classic, lemon, salted butter caramel, chestnut, chocolate-praline, coffee, strawberry and speculoos.
